Good thoughts Andrew,
I mostly like the definition of NNGroup about CX and UX.
"They both encompass all aspects of the end-user's interaction with the company, its services, and its products."
When UX is only talking about Digital Interaction, CX is the whole process, Offline - Online.
At the end of the day, a good experience customer requires we do good on all perspective, not only digital interaction but also offline service.
